The team at Brū employ a back-to-basics business model, as a way of managing expectations. We want people to be able to visualise what they will receive before they walk through our door. That's why we choose to use adaptations from our old Edmonds cookbook. We aim to greet everyone that walks through our door like an old friend. The cafe is an honest space, tucked into a heritage building, in the heart of Dunedin city. We strive to be an inclusive space, and we work hard daily to meet some of today's vast dietary requirements. Being a Dunedin girl, born and bred, moving back to Dunedin felt like arriving home after a long day. Bringing with me, my Husband David and our four children. David and I met on our respective OE's, in 2005, he was the chef and I was the waitress. After the second lock down, David and I searched for a business we could call our own, and for whatever reason the ones we looked at didn't work out, but we didn't lose sight of the goal. We were establishing ourselves, as managers, in another Dunedin cafe, when I stumbled across an advertisement for vacant premises to lease. I knew this was the one, we handed in our notice before we had officially secured the premises. I knew it was our turn, I had to have faith that it would come together, and it did.. phew! We officially started our lease on the 16th of February, finished up our management roles on the 20th and had our first day of trade on the 27th. We set out to bring our international hospitality skill set to an intimate cafe setting. We knew we wanted to be honest and inclusive, in our thinking and the setting we created. We wanted to grab our place in the community, work together and include our children. We wanted to create menu items that reminded us of our childhood. We needed to do it all and sustain our family from the proceeds, it had to happen on a less than 15k investment. We also didn't want to take out a business loan. I'm so proud to say we have achieved this, and we will continue to stay true to our goals everyday. We're here, we're doing it and it's so much more than I could've imagined.
